Making the most of the gorgeous weather last week (whilst it lasted)… by making ice lollies. They are so refreshing and delicious; they are also healthy which makes you feel much less guilty about eating a few ;).
100g mango, chopped
150g coconut yogurt
half a lime, juiced
100g dark chocolate
20g desiccated cocoanut (optional)
1. Blend together the coconut yogurt, mango and lime juice and separate into 3-4 lolly moulds (depending on the size of your moulds). Freeze for a few hours or overnight
2. Melt the dark chocolate and dip half the frozen lolly into it, sprinkle with lime zest and desiccated coconut and leave to set (it will literally take 10 minutes in the freezer) then enjoy!
